Lessini Durello DOC Classic Method Sparkling Wine 36 months 750ml

The effervescence of this sparkling wine is particularly elegant. A Classic Method that has been left to ferment on the yeasts for 36 months: three years of quietude of the wine left in stacks to mature together with its own yeasts.

A wine that comes from a very special area of the province of Verona: that of the ancient Calvarina volcano, the largest extinct volcano of the Eocene across the entire alpine foothills. A rugged land but at the same time rich in minerals that offer the wine great and complex aromatic sensations.

The production process

The significant time of fermentation has enhanced the characteristics of complexity and especially softened its typical exuberant characters. The wine from which this sparkling wine is produced comes from fermentation both in steel and from aging in oak barrels. All phases of production are manual, including the remuage sur pupitres.

The Lessini Durello DOC Spumante Metodo Classico 36 months is ideal for pairing with dishes based on raw fish and in particular oysters and raw dishes of scampi and Sicilian red prawns. It is even more perfect as an aperitif, but it is also quite versatile with raw red meats, as well as with cured meats such as Culatello, Parma ham, or San Daniele.

Tasting

In appearance, it shows a brilliant yellow color. On the nose, you can detect the characteristic crust of bread and yeasts elegantly mixed with notes of dried fruit and citrus. On the palate, it is harmonious and persistent thanks to the good acidity that well characterizes the fine perlage and typical bouquet. Persistent with a citrus aftertaste. Serving temperature: 6 – 8 °C.
