The Carnia Alto But from La Casearia Carpenedo is a cheese that represents the unbreakable bond between Antonio Carpenedo and Friuli Venezia-Giulia, the region of origin of this wonderful raw milk cheese, selected and chosen for over 30 years.
The Carnia Alto But Stravecchio is nothing more than the version of the cheese that is aged the longest: the raw cow's milk toma is, in fact, put to age for a minimum of 16 months.
The name originates from Valle But, where the production rhythms are those of nature. This wonderful cheese comes from the milk produced by cows of the Brown Swiss breed. The processing has been handed down for more than 100 years from the old dairies in the towns of Val But. A local production that Antonio Carpenedo wanted to spread throughout Italy and the world, receiving increasing acclaim. Once again, Antonio has discovered a rarity to be tasted.
The Carnia Alto But Stravecchio from La Casearia Carpenedo (which we present here in a 340-gram round shape) is a truly good and genuine cheese. Inflated words, but Alto But is truly a rare expression of the territory and tradition, with delicate and strong flavors depending on the aging, but characteristic of the mountain pastures. Decisive and spicy flavor, it is an excellent cheese in a cheese board, alongside spicy sauces or berries. For pairing, we prefer a Rosso Colli di Conigliano.
Straw yellow predominates in the rind, a very intense shade. Almost absent is the presence of partridge eyes in the paste. The texture of the paste is hard and crumbly. Unmistakable high mountain aroma. The high-altitude forage prevails, testifying to the quality of the milk.
