The Asiago DOP Fresco Oro del Tempo is the table cheese typical of the homonymous plateau in the Alps, aged for a period ranging from 30 to 40 days.
This cheese is the result of a particular selection among the wheels that exhibit characteristics more closely related to the Venetian dairy tradition: creaminess, sweetness, and more developed eyes, features that allow these wheels to be branded "Oro del Tempo".
The Asiago Fresco "Oro del Tempo" originates from the homonymous plateau of Asiago, located in a green area rich in flat pastures and typically in large dairies. The origin of this cheese is rather recent: the beginning of its production dates back to the 1920s of the 20th century.
The fresh Asiago is also called "Asiago pressed" because the freshly produced wheels undergo pressing under manual or hydraulic presses in order to dry them as much as possible. The Asiago also obtained Protected Designation of Origin in 1996.
The Asiago Fresco Oro del Tempo is obtained from the dairy transformation of whole milk, from one or two milkings, of exclusively cow origin subjected to pasteurization and aged for about 40 days.
The area of milk collection and production of the Asiago DOP cheese specifically covers four provinces: the entire Vicentino and Trentino, and a small part of Padovano and Trevigiano.
