The Wild Boar Salami by Quadro Carni e Salumi is a typical cured meat from Piedmont, where this mammal is very common in the wild. The bold and unmistakably wild flavor of the boar combined with the dark red color of the salami mixture evokes the tastes and sensations of the woods and mountains.
It is not easy to find an excellent wild boar salami: sometimes it is too dry, sometimes it crumbles. The wild boar salami from Quadro Carni e Salumi is a good example of how pig and wild boar are intrinsically linked. It is indeed made with carefully selected and deboned wild boar meat and a portion of pork following the dictates of Piedmontese tradition. This way, the product becomes sweeter and the texture softer, mitigating the robustness of the wild boar meat.
Characteristics: to produce this salami, selected trimmings of wild boar are used. The meat is minced with the addition of pancetta, jowls, and spices (including pepper and garlic). It is then stuffed into natural casings, tied by hand, and aged for about 60 days.

Being tenacious and persistent in the mouth, this cured meat pairs well with great red wines, such as Barolo. Best enjoyed alongside aged sheep or goat cheeses. It is recommended as an appetizer for game-based dinners.
