The Montasio Mezzano DOP is a table cheese typical of the Friuli Venezia Giulia region and the northeast Veneto. The production area of Montasio cheese therefore includes two regions: Friuli Venezia Giulia, in the provinces of Udine, Pordenone, Gorizia, and Trieste, and Veneto in the provinces of Treviso, Belluno, and partially in Venezia and Padova.
It is characterized by a cooked, semi-hard paste that is compact, straw-yellow in color with regular and homogeneous holes and has a grainy and crumbly consistency. The rind is smooth, elastic, and compact, with a light brown color.
Montasio Mezzano is aged for a period ranging from 4 to 10 months and has a stronger and fuller flavor.
It is produced exclusively with fresh raw cow's milk coming from the production area. Collected from two different milkings per day, with subsequent evening milk skimming, this milk is transformed into cheese using gentle techniques that respect the original microbial and bacterial flora.
To guide the fermentation, a low-acid inoculum obtained by fermenting the milk after a low-temperature pasteurization is used.

It pairs pleasantly with polenta or fine meats. The recommended pairing is with white wines such as Merlot.
