A pearl set in the center of Italy. This is Umbria, a small region but very rich in beauty. The green lung of Italy, mostly mountainous and hilly, where the magic of silence and the aptitude for the spiritual dimension of the soul is mediated by ancestral landscapes and an uncontaminated and overflowing nature. The medieval cities, the small villages, the abbeys, the Romanesque churches located here and there. An intertwining of culture and art in its purest form. Medieval pearls such as Assisi, Foligno, Perugia, Spoleto, Terni, Città di Castello, Norcia Todi, Orvieto. But in every village you can breathe history.

The man in Umbria was also good at not ruining what his ancestors had thought and built. A respect that must be reckoned with, however, the fury of nature that, in this region, has struck with major earthquakes for too many times, the last one in the summer of 2016 when Norcia broke down. Here the earth trembles, but the soul vibrates with emotions. Entering Umbria means stepping into the mists of time, where even cuisine has maintained a strong bond with all the oldest culinary and productive traditions. The attachment to their land here is very strong and the era of lordships has certainly represented one of the most decisive historical moments of these peoples. The historical re-enactments have always continued. Some historical re-enactments are not even to be defined as historical re-enactments. In fact, they are patron saint festivities, rides, races, diatribes and disputes that have continued since the time of the lordships. Halberds, arrows, armor, are still alive and present without continuous solutions. At some fairs it seems that time has stopped

TYPICAL UMBRIAN PRODUCTS

Popular Umbrian cuisine has become a must today and has undergone few changes throughout history. Ancient cereals have been revived and consolidated. The Umbrian land is our treasure chest of centuries-old olive groves in Italy. Umbrian oils are among the most precious for their balance and their structural and aromatic power. Great green oils, with even balsamic nuances. Umbria has made no exception on its territory and has created a PDO that includes the entire region with Umbria PDO Extra Virgin Olive Oil.

Wine also has its importance in Umbria. There are two DOCG, Torgiano Rosso and Sagrantino di Montefalco. Wines with great structure and elegance. But let's also remember the Assisi and Orvieto DOCs, the Grechetto dei Colli Martani, the Malvasia dei Colli Amerini, and finally the Colli Perugini to the south of the regional capital. Cereals play a very important role among typical Umbrian products. In particular the Farro di Monteleone di Spoleto DOP, the very famous Lentil di Castelluccio di Norcia IGP, to which, who knows how many, have asked for their luck on New Year's Eve dinners. The Colfiorito PGI Potato is a sweet and compact jewel of the Umbrian hills.

Here too, as in Marche and Romagna, meat farms of the Central Apennine White Calf breed IGP are very important. Among the cold cuts, the Prosciutto di Norcia IGP stands out, with its characteristic pear-shaped shape, often adorned with pink peppercorns. In fact, its sapidity and its intense flavor are the main characteristic, for a cured meat that prefers to be cut to a knife in a vise. We are in central Italy and therefore the presence of sheep farms and pastures is accentuated. Species not only for milk but also for meat, such as the Lamb from Central Italy IGP in particular.

For the milk produced from sheep, on the other hand, the production of Pecorino Toscano PDO is also established here. The intimate value of Umbria must be tried, entering its centuries-old oak forests, where clear streams flow meandering and impetuous, where wild animals jump through the woods, where you must be careful to walk so as not to step on creepy porcini mushrooms. Umbria always gives strong emotions to the soul. Its cuisine leaves nothing to chance and, of course, its genuineness and its great correspondence with the territory and what it provides amazes. The land most linked to medieval history that Italy counts among its lands.
