In Ferrara, the tradition of cured meats, as in all of Emilia, is linked to medieval history. To preservation practices of meat that are the precursors of processes that are still passed down from father to son today. The Zironi family represents one of the most important and long-standing realities of the Ferrarese salami tradition. Since 1954, they have been producing fresh and aged sausages. The production that particularly distinguishes them is the famous Salama da Sugo I.G.P. A product that has made history in Ferrarese salumeria and goes beyond history; it tells of a proud people who have never left anything to chance at the table and have always sought pleasure and a strong identity.
