Italian cheeses have always been among the most appreciated, with over 450 traditional cheeses catalogued by the Regions, to which are added the 40 PDO cheeses recognized by the EU. 

Our list includes the "famous" ones like Fontina Valdostana DOP, produced throughout the Aosta Valley, from raw whole milk of Valdostana cattle (Valdostana red-spotted, black-spotted, and brown).

You can also find Puzzone di Moena, which is a semi-cooked cow’s milk cheese made from raw milk, produced in the Fiemme and Fassa valleys. The meadows and pastures range from a minimum height of 1000 meters to 2000 meters of the alpine pastures. The breeds allowed by the specification are Bruna, Friesian, Red-Spotted, Grigio Alpina, Rendena, Pinzgau, and their crosses. 

Or the Montasio, produced throughout Friuli and part of Veneto, is a hard, cooked cheese made exclusively from cow’s milk, with medium and long aging. It owes its name to the Montasio plateau, where production traces back to 1200. 

From Veneto, we have the Morlacco: also protected by a Slow Food Presidia, this raw cow’s milk cheese dates back to the time of the Republic of Venice. 

In our selection, we also have Bitto, an exceptional alpine cheese, produced in the area that includes the entire province of Sondrio and some areas of the Alta Valle Brembana, at an altitude ranging from 1400 to 2000 meters. 

An important product from southern Italy is the Caciocavallo Silano DOP, a semi-hard cheese made from spun dough produced exclusively from whole cow’s milk from farms located in Calabria, Campania, Molise, Abruzzo, Apulia, and Basilicata.
